2. In a mixing bowl, combine the self-rising flour (or all-purpose flour and baking powder mixture), salt, and sugar (if using).
3. Gradually add the water to the dry ingredients, stirring as you pour. Mix well until a dough forms. Adjust the amount of water as needed; you may not need the full cup depending on the flour and humidity.
4. Once the dough comes together, turn it out onto a lightly floured surface and knead it briefly until it’s smooth.
5. Shape the dough into a round or oval shape, about 1-2 inches thick.
6. Wrap the dough in aluminum foil or place it in a cast-iron Dutch oven with a lid. If using foil, make sure to wrap it securely.
7. Place the wrapped dough directly onto the hot coals or on a grill over the fire. Cook for around 20-30 minutes, turning occasionally, until the damper is cooked through and sounds hollow when tapped.
8. Once done, carefully remove the damper from the heat and allow it to cool slightly before unwrapping or slicing.
9. Serve the damper warm, either plain or with toppings like butter, jam, or honey.
